  • 1 lb ground beef
  • 1 small yellow onion (diced)
  • 2 medium carrots (diced)
  • 3 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 29 oz diced tomatoes
  • 15 oz dark red kidney beans
  • 15 oz cannellini beans
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 8 oz Ditalini pasta
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar

Instructions

  1. In a large dutch oven over medium heat, brown the ground beef for about 7 minutes until fully cooked.
  2. Drain excess grease and add the diced onion, carrots, and celery. Cook for about 10 minutes until softened; then add minced garlic and sauté for an additional 1-2 minutes.
  3. Stir in diced tomatoes, kidney beans, cannellini beans, tomato sauce, beef broth, basil, oregano, salt, pepper, and sugar. Bring to a simmer and cook for approximately 20 minutes.
  4. Meanwhile, cook Ditalini pasta separately according to package instructions until al dente.
  5. Just before serving, combine the drained pasta with the soup. Serve hot.
