  • 3 Tbsp olive oil
  • 1 lb lean ground beef
  • 4 large carrots (peeled and diced)
  • 3 stalks celery (diced)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 3 cans (15 oz each) tomato sauce
  • 3 cups vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) dark kidney beans (drained and rinsed)
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • Cooked ditalini pasta

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Add ground beef and cook until browned, about 8-10 minutes. Transfer meat to a platter, reserving drippings.
  2. In the same pot, add carrots, celery, onion, and garlic. Sauté until tender and slightly caramelized, about 5-7 minutes.
  3. Stir in tomato sauce, vegetable broth, canned tomatoes, both beans, reserved meat, vinegar, bay leaves, Italian seasoning, salt, and pepper. Simmer uncovered for about 15 minutes.
  4. Remove bay leaves and stir in cooked ditalini pasta. Simmer on low heat for an additional 10 minutes before serving.
