  • 2 Tbsp olive oil
  • 1 lb lean ground beef
  • 1 1/2 cups chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 3 cans tomato sauce (8 oz each)
  • 2 cans low-sodium chicken broth (14.5 oz each)
  • 1 can diced tomatoes (15 oz)
  • 1 cup dry ditalini pasta
  • 1 can dark red kidney beans (15 oz)
  • 1 can great northern beans (15 oz)
  • 1 1/2 tsp dried basil
  • 1 tsp dried oregano
  • 3/4 tsp dried thyme
  • 1/2 tsp dried marjoram
  • Salt and freshly ground black pepper
  • 2 tsp granulated sugar

Instructions

  1. Heat 1 Tbsp olive oil in a large pot over medium-high heat. Brown the ground beef, drain excess fat, and set aside.
  2. In the same pot, heat the remaining olive oil. Sauté onion, carrots, and celery until tender (about 6 minutes). Add minced garlic and sauté for another minute.
  3. Stir in chicken broth, tomato sauce, water, diced tomatoes, sugar, herbs, and the cooked beef. Season with salt and pepper to taste.
  4. Bring to a boil then reduce heat; cover and simmer for about 15-20 minutes until vegetables are soft.
  5. Cook ditalini pasta separately according to package directions until al dente.
  6. Add drained beans and cooked pasta into the soup; allow to cook for an additional minute.
  7. Serve warm garnished with minced parsley and grated cheese if desired.
