  • 1 tablespoon olive oil
  • 2 medium carrots, diced
  • 1 large onion, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 carton (32 oz) chicken broth
  • 1 can (15 oz) Great Northern beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup ditalini pasta
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Add the ground beef and brown for 3–5 minutes. Drain excess fat.
  2. Sauté the diced carrots, onion, celery, and minced garlic for about 4 minutes until softened.
  3. Return the cooked beef to the pot. Stir in diced tomatoes and tomato sauce.
  4. Add Great Northern beans, kidney beans, and chicken broth; simmer for about 10 minutes.
  5. Stir in ditalini pasta and Italian seasoning; cook for an additional 10 minutes until pasta is tender.
  6. Serve hot with optional garnishes like fresh basil or grated cheese.
