  • 1 white fish fillet (tilapia, cod, or sole)
  • 1 cup baby potatoes or Yukon gold, cubed
  • 1 ripe avocado
  • 1 tsp olive oil or butter
  • 1 tbsp olive oil
  • Salt, pepper, garlic powder, paprika (to taste)
  • 1 tsp smoked paprika
  • 1 tbsp chopped tomato
  • 1 tbsp chopped red onion or green onion
  • Lime juice and salt, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed potatoes in olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through until golden brown.
  2. While the potatoes roast, season the fish fillet with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium heat and sear the fish for about 3-4 minutes on each side until cooked through.
  3. In a mixing bowl, mash the avocado and mix in chopped tomato, onion, lime juice, and salt to taste for guacamole.
  4. Serve the seared fish alongside roasted potatoes and guacamole.
