  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 4 1/4 cups low sodium chicken broth
  • 1/4 cup lemon juice
  • 1/2 red onion (chopped)
  • 2 ears grilled corn (cut off the cob)
  • 1 English cucumber (sliced and quartered)
  • 1 red bell pepper (chopped)
  • 1 pint cherry tomatoes (halved)
  • 1 can garbanzo beans (15 oz., drained and rinsed)
  • 1/2 cup Kalamata olives (halved)
  • 1/2 cup sliced almonds
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup feta cheese

Instructions

  1. Prepare the Dressing: In a small bowl or jar, whisk together the dressing ingredients and refrigerate.
  2. Cook the Orzo: Melt butter and olive oil in a large nonstick skillet over medium-low heat. Add uncooked orzo and chopped red onion; sauté for 3–5 minutes until onions are soft.
  3. Simmer with Broth: Stir in chicken broth, lemon juice, salt, and pepper. Bring to a simmer and cook until orzo is al dente (about 8–10 minutes). Drain if necessary and cool in the refrigerator.
  4. Combine Ingredients: In a large bowl, mix cooled orzo with all salad ingredients. Pour dressing over salad and toss gently to combine.
  5. Taste Test: Adjust seasoning with additional lemon juice, salt, or pepper before serving.
