  • 1/4 cup loosely-packed fresh basil
  • 1/4 cup loosely-packed fresh parsley
  • 2 cloves garlic, peeled and smashed
  • 1 tablespoon capers, drained
  • 1/2 lemon, juiced (about 1 1/2 tablespoons, or more if needed)
  • 2 cups pitted olives (Kalamata & green olives or a purple/green mix of Spanish olives)
  • 1/4 cup extra virgin olive oil (or more if desired)
  • Salt and pepper to taste

Instructions

  1. Gather and wash fresh herbs; pat dry.
  2. In a food processor, add basil, parsley, garlic, capers, and lemon juice. Pulse until roughly combined.
  3. Add pitted olives and olive oil; pulse until desired consistency is reached.
  4. Taste and season with salt and pepper as needed.
  5. Transfer to a bowl, cover tightly, and refrigerate for up to 5 days. Bring to room temperature before serving.
