  • 2 cans (14.5 ounces each) diced tomatoes, undrained
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup small pasta (such as ditalini or elbows)
  • Grated Parmesan cheese, for serving
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground beef and brown it while breaking it apart.
  3. Stir in diced onion, garlic, carrot, and celery; cook until softened.
  4. Pour in diced tomatoes along with cannellini and kidney beans.
  5. Add beef broth and stir to combine all ingredients.
  6. Sprinkle in oregano and basil; season with salt and pepper.
  7. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.
  8. In the last 10 minutes, add small pasta; cook until tender.
  9. Taste and adjust seasoning if necessary.
  10. Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
