  • 15 oz can cannellini beans
  • 15 oz can dark red kidney beans
  • 1 onion chopped
  • 2 carrots cubed
  • 2 stalks celery chopped
  • 1 cup ditalini pasta
  • 32 oz beef broth
  • 28 oz crushed tomatoes
  • 2 bay leaves
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 2 cloves garlic chopped

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  2. Transfer the beef to the slow cooker.
  3. Add crushed tomatoes and seasonings (oregano, basil, thyme) to the cooker and mix well.
  4. Incorporate chopped onions, carrots, and celery into the mixture.
  5. Stir in both cans of beans.
  6. Pour beef broth over all ingredients.
  7. Add bay leaves on top.
  8. Cover and cook on low for 4 hours or high for 2 hours.
  9. In the last 30 minutes of cooking, add ditalini pasta and stir well until tender.
