  • 250 grams plain flour
  • 2½ teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 100 grams caster sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 clementines (zest and juice)
  • Approx. 125 millilitres full-fat milk
  • 75 milliliters vegetable oil
  • 1 large egg
  • 175 grams dried cranberries
  • 3 teaspoons demerara sugar (for topping)

Instructions

  1. Preheat your oven to 200°C/180°C Fan/gas mark 6/400ºF and line a muffin tin with liners.
  2. In a large bowl, mix together the flour, baking powder, bicarbonate of soda, caster sugar, cinnamon, and nutmeg.
  3. Grate the clementine zest into the dry mixture.
  4. Squeeze the juice from the clementines and combine it with milk until you reach a total of 200ml.
  5. Mix in the vegetable oil and beaten egg to the liquid ingredients.
  6. Combine wet and dry mixtures gently until just mixed; avoid overmixing.
  7. Fold in dried cranberries carefully.
  8. Spoon batter into muffin cases and sprinkle demerara sugar on top.
  9. Bake for about 20 minutes until golden brown.
