  • 115 g unsalted butter (melted or room temperature)
  • 135 g light brown soft sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat your oven to 190ºC (or 170ºC fan). Line a 9×9 inch baking tin with parchment paper.
  2. In a mixing bowl, combine melted butter with light brown sugar and granulated sugar until well mixed.
  3. Add the egg and vanilla extract, stirring until fully blended.
  4. Incorporate plain flour, cornflour, bicarbonate of soda, and salt into the mixture until you have a consistent dough.
  5. Fold in the milk chocolate chips and most of the mini eggs.
  6. Evenly press the cookie dough into the baking tin and sprinkle remaining mini eggs on top.
  7. Bake for 18–22 minutes until the top looks dry. Let cool completely before cutting into squares.
