Mexican Street Corn Salad is a vibrant, flavorful dish that brings the essence of street food right to your table.   • 4 cups frozen corn (approximately 24 oz)
  • 1 red bell pepper, diced
  • 1 bunch fresh cilantro, minced (reserve some for garnish)
  • 1 jalapeno, diced
  • 1/2 large red onion, diced
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 4 tablespoons fresh lime juice (about 2 limes)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder
  • 2/3 cup cotija cheese, shredded

Instructions

  1. Heat olive oil in a sauté pan over medium-high heat. Add frozen corn and cook until charred (about 7-10 minutes). Transfer to a large bowl.
  2. In the same bowl with the corn, add diced bell pepper, jalapeno, minced cilantro, and red onion. Mix well.
  3. In a small bowl, combine sour cream, mayonnaise, lime juice, cumin, paprika, salt, and chili powder. Stir until smooth.
  4. Pour dressing over the corn mixture and toss to coat evenly. Fold in half of the cotija cheese.
  5. Garnish with remaining cotija cheese and reserved cilantro leaves before serving.
