  • 5 ancho peppers
  • 5 guajillo peppers
  • 23 chiles de arbol (optional)
  • 1 tablespoon olive oil
  • 1 large white onion
  • 3 large tomatoes
  • 5 cloves garlic
  • 1 tablespoon Mexican oregano
  • 1 teaspoon cinnamon
  • 4 cups beef stock
  • 3.5 pounds lamb shoulder (or beef shank)

Instructions

  1. Toast the dried peppers in a pan over medium heat for about 1–2 minutes until the skins darken.
  2. Transfer the toasted peppers to a bowl, cover with hot water, and steep for 20 minutes.
  3. In the same pan, heat olive oil and sauté chopped onion and tomatoes for about 5 minutes until softened.
  4. Add garlic and cook for another minute. Combine all cooked ingredients with soaked chilies in a food processor; blend until smooth.
  5. Marinate meat in the sauce for at least 2 hours or overnight in the fridge.
  6. In a large pot, combine marinated meat, chopped roasted tomatoes, and remaining beef broth; cover and cook on medium heat for about 3 hours or until tender.
