  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, and minced garlic.
  3. Add the egg, Italian seasoning, salt, and pepper. Mix until just combined.
  4. Transfer the mixture to a loaf pan and press gently into an even shape.
  5. In a small bowl, mix the ketchup and Dijon mustard together. Spread over the top of the meatloaf.
  6. Place the loaf pan on a baking sheet and bake for 45–50 minutes or until cooked through (internal temperature should reach 165°F or 74°C).
  7. Allow to rest for 10 minutes before slicing.
