  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red bell pepper, diced
  • ¼ red onion, finely chopped
  • ⅓ cup Kalamata olives, pitted and sliced
  • ¼ cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine chickpeas, cannellini beans, cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, and parsley.
  2. In a separate bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until well mixed.
  3. Drizzle the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  4. Optional: Sprinkle crumbled feta cheese on top before serving.
  5. Chill for 20–30 minutes for best flavor integration or serve immediately if short on time.
