  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 pounds lean ground beef (or chicken/turkey)
  • ½ cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 3/4 cup ketchup (for the glaze)
  • ¼ cup brown sugar (for the glaze)
  • 2 tablespoons apple cider vinegar (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in a skillet over medium heat, add onions and cook until softened. Stir in garlic and remove from heat.
  3. In a large mixing bowl, combine the sautéed onions, ground beef (or chicken/turkey), milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, pepper, and parsley. Mix gently until just combined.
  4. Transfer the mixture into a loaf pan and smooth the top.
  5. Place in the oven and bake for 40 minutes.
  6. In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar for the glaze. Spread over the meatloaf after the initial baking.
  7. Return to the oven for an additional 20–30 minutes until fully cooked.
  8. Let rest for 10 minutes before slicing.
