  • 1/2 pound ground beef
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 2 cloves garlic (minced)
  • 1/2 small onion (minced)
  • 3 tablespoons Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 1 cup fresh spinach
  • 6 slices turkey
  • 6 slices provolone cheese or 1 cup mozzarella cheese

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a mixing bowl, combine ground beef, bread crumbs, egg, garlic, onion, Parmesan cheese, parsley, salt, and pepper. Mix until well blended.
  3. On a lined sheet pan, spread the meat mixture into a rectangle about 12 by 7 inches.
  4. Layer the spinach over the meat mixture followed by turkey slices and provolone or mozzarella cheese.
  5. Carefully roll the meat mixture from one end to form a log shape using the parchment paper as a guide.
  6. Bake in the preheated oven for about 25 minutes until fully cooked.
  7. Allow to rest for a few minutes before slicing into pieces and serving warm.
