  • 6 eggs
  • 2 teaspoons salt
  • 2 tablespoons white vinegar
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1/3 cup honey
  • 1/4 small yellow onion (diced)
  • 4 garlic cloves (minced)
  • 2 stalks scallions (minced)
  • 1 Korean red pepper (sliced)
  • 1 serrano pepper (sliced)
  • 1 tablespoon toasted sesame seeds

Instructions

  1. 1. Soft Boil the Eggs: Bring water to a boil with salt and vinegar in a medium saucepan. Carefully lower eggs into the boiling water and simmer for 6 minutes for room-temperature eggs or 7 minutes for refrigerated eggs.
  2. 2. Chill the Eggs: Remove boiled eggs with a spider strainer and place them in an ice water bath for about 10 minutes until cooled completely. Peel the eggs gently.
  3. 3. Make the Marinade: In a mixing bowl, combine soy sauce, water, honey, diced onion, minced garlic, minced scallions, sliced Korean and serrano peppers, and toasted sesame seeds. Mix well.
  4. 4. Marinate Overnight: Place peeled eggs in an airtight container and pour marinade over them until fully submerged. Seal and refrigerate for at least 6 hours—overnight is preferable.
  5. 5. Serve: Enjoy Mayak Eggs over rice or as a snack with additional marinade drizzled on top.
