  • 60g butter
  • 2 large onions, coarsely chopped
  • 2 medium potatoes, coarsely chopped
  • 2 medium carrots, coarsely chopped
  • 3 garlic cloves, crushed
  • Zest and juice of 1 orange
  • 2 tsp mild curry powder
  • 1.8 litres vegetable or chicken stock
  • 2 x 400g cans chopped tomatoes
  • 2 eating apples, peeled and chopped
  • Salt and black pepper, to taste

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add the onions, potatoes, carrots, crushed garlic, and orange zest. Cook gently for about 5 minutes until onions are translucent.
  2. Stir in mild curry powder and cook for another 1–2 minutes.
  3. Add vegetable or chicken stock, orange juice, chopped tomatoes, and apples; season with salt and black pepper. Bring to a simmer.
  4. Cover and let simmer gently for about 30 minutes.
  5. Remove orange zest and blend the soup until smooth using a blender or immersion blender. Return to pot over low heat to reheat before serving.
  6. Ladle into bowls hot and garnish with herb croûtes.
