  • 34 medium bananas or 2 large bananas
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup unsalted butter for glaze
  • 1/2 cup pure maple syrup
  • 1/4 tsp ground cinnamon for glaze
  • 1/2 tsp vanilla extract for glaze
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F and grease one 9×5 inch loaf pan or two 8×4 inch pans.
  2. In a small bowl, mash bananas until smooth and mix in brown sugar, vanilla extract, and cinnamon.
  3. In a large bowl, cream together softened butter and sugar until light; then add eggs one at a time.
  4. Sift flour, baking soda, and salt into the butter mixture and stir gently to combine.
  5. Fold in the banana mixture until well combined.
  6. Pour batter into prepared pan(s) and bake for 35-40 minutes (30 min at 350°F then reduce to 325°F for an additional 15-20 min if using one pan).
  7. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
