  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups panko breadcrumbs
  • 48 slices Swiss cheese
  • ½ cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 3 tablespoons olive oil or vegetable oil
  • Pinch of salt and black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Use a meat mallet to pound chicken breasts to about ½ inch thick for even cooking.
  2. Set up three shallow bowls: one with seasoned flour, another with beaten eggs, and the last with panko breadcrumbs mixed with optional seasonings.
  3. Dredge each chicken breast in flour, dip in egg wash, and coat thoroughly with panko breadcrumbs.
  4. Heat olive oil in a frying pan over medium heat. Fry each breaded chicken breast until golden brown (about 4-5 minutes per side), then transfer to a baking sheet.
  5. Layer each piece with chicken slices and top with Swiss cheese. Bake for approximately 10 minutes until the cheese melts.
  6. Meanwhile, whisk together mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper until smooth for the dipping sauce.
