  • 1 lb fresh lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 1 cup chicken stock
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 2 pre-made pie crusts

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add olive oil. Sauté the onion and garlic until translucent.
  3. Stir in the carrots and celery; cook for about 5 minutes until they start to soften.
  4. Add heavy cream and chicken stock; bring to a gentle simmer.
  5. Mix in the lobster meat and peas; simmer for another 5 minutes.
