  • 1 1/2 lemons
  • 10 ounces feta cheese
  • 4 ounces cream cheese or heavy cream
  • 1 bunch scallions
  • 1/3 cup plus 3 tablespoons olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne
  • 1 tablespoon hot water

Instructions

  1. Preheat your broiler and line a baking sheet with foil.
  2. Juice one lemon to yield about 3 tablespoons of juice and slice the other half into thin rounds.
  3. Toss the scallions and lemon slices in olive oil until well-coated and arrange them on the baking sheet.
  4. Broil for 7 to 9 minutes until charred, checking periodically.
  5. In a food processor, blend feta, cream cheese (or heavy cream), remaining olive oil, reserved lemon juice, black pepper, cayenne, and hot water until smooth. Add most of the charred scallions and pulse briefly for texture.
  6. Transfer to a serving bowl and garnish with reserved scallions and additional lemon slices before serving with pita chips or crackers.
