  • 2 1/2 Tbsp fresh lemon juice
  • 1 1/2 Tbsp water
  • 1 1/2 tsp unflavored vegan gelatin powder
  • 1 cup powdered sugar (divided)
  • Yellow food coloring (optional)
  • Sweetened whipped cream
  • Lemon wedges
  • Blueberries
  • Mint

Instructions

  1. Prepare the graham cracker crust by mixing crushed crackers, sugar, and melted butter; evenly divide among dessert cups.
  2. Dissolve vegan gelatin in lemon juice and water; let rest for 5 minutes.
  3. Whip heavy cream with powdered sugar until stiff peaks form.
