  • ⅓ cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp freshly squeezed lemon juice

  • ½ tsp vanilla extract
  • ½ cup milk
  • 1 cup blueberries (fresh or frozen)
  • For the glaze: 2 tbsp melted butter
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper or nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, mix melted butter, sugar, vanilla extract, eggs, lemon zest, and lemon juice until well combined.
  4. Gradually add the dry ingredients to the wet mixture while alternating with milk; mix until just combined.
  5. Gently fold in blueberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–60 minutes or until a toothpick comes out clean.
  8. Cool for about 15 minutes before transferring to a platter.
  9. For the glaze, whisk melted butter, powdered sugar, vanilla extract, and lemon juice until smooth; drizzle over the cooled loaf.
