  • 1 1/4 cup All-Purpose Flour
  • 3/4 cup Cake Flour
  • 1 tsp. corn starch
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup cold, unsalted butter, cubed
  • 3/4 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. In a large bowl, whisk together all-purpose flour, cake flour, baking soda, baking powder, cornstarch, and salt.
  3. In a stand mixer, cream cold butter until smooth. Gradually add brown sugar and granulated sugar until fluffy. Mix in one egg and one egg yolk.
  4. Slowly incorporate the dry ingredients into the wet mixture before gently folding in chocolate chips.
  5. Measure and shape six cookies weighing about 5.7 oz each onto a lined baking sheet without flattening them.
  6. Bake for 10-12 minutes until golden brown on top but still soft in the center.
  7. Allow cooling on the sheet before transferring to a rack.
