  • 6 bone-in beef chops, 3-4 lbs total
  • 1/4 cup table salt
  • 4 cups water
  • coarse ground black pepper
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeño, sliced and seeded
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter
  • fresh parsley for garnish

Instructions

  1. Brine the Chops: Dissolve salt in water in a large container. Submerge beef chops and let them brine for 30 minutes to 2 hours.
  2. Make the Glaze: In a saucepan over low-medium heat, combine vinegar, peach jam, jalapeño, and red pepper flakes until it simmers and thickens. Stir in butter and set aside.
  3. Season Chops: After brining, pat dry and season both sides generously with coarse black pepper.
  4. Grill: Preheat grill on high for 15 minutes then reduce to low. Grill chops for 15 to 20 minutes, turning every five minutes until they reach an internal temperature of at least 135°F.
  5. Apply Glaze: Brush glaze on both sides when internal temperature reaches 135°F, continue grilling until reaching your desired doneness of 145°F.
  6. Rest & Serve: Allow chops to rest for three minutes before serving.
