  • 2 pounds chicken pieces
  • 1 habanero chile
  • 1 bunch scallions
  • 2 cloves garlic
  • 1 ½ teaspoons dried thyme
  • 2 tablespoons brown sugar
  • 1 tablespoon ground allspice
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Rinse the chicken under cold water and pat dry with paper towels.
  2. In a food processor, blend together the habanero, scallions, garlic, thyme, brown sugar, allspice, soy sauce, lime juice, oil, salt, and pepper until smooth.
  3. Place the chicken in a large sealable plastic bag and pour in the marinade. Seal tightly and refrigerate overnight.
  4. Preheat your grill and lightly oil it to prevent sticking. Grill the marinated chicken for about 10 minutes on each side until golden brown and cooked through.
