  • 16 ounces penne pasta
  • 4 ounces turkey turkey pepperoni
  • 4 ounces sliced turkey
  • 4 ounces provolone cheese
  • 4 ounces shredded iceberg lettuce
  • 1 pint grape tomatoes (halved)
  • 1/2 cup sliced pepperoncini peppers
  • 1/2 red onion (finely diced)
  • 1/2 cup mayonnaise
  • 2 tablespoons red apple vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, vinegar, garlic, sugar, oregano, salt, pepper, and parmesan until smooth.
  3. In a large bowl, combine cooled pasta with lettuce, turkey pepperoni, sliced turkey, provolone cheese, tomatoes, pepperoncini peppers, and onion.
  4. Pour the dressing over the salad mixture and toss gently to coat.
  5. Chill in the refrigerator for at least 10 minutes before serving.
