  • 4 medium russet potatoes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground pepper
  • 2 tbsp butter
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup shredded cheddar cheese (reserve some for topping)
  • 2 tbsp chopped chives

Instructions

  1. Preheat your oven to 400°F (200°C) and scrub the russet potatoes clean.
  2. Poke holes all over each potato with a fork, rub with olive oil, and sprinkle with salt. Bake directly on the oven rack for about 1 hour until tender.
  3. Allow the potatoes to cool slightly, then cut in half lengthwise and scoop out most of the flesh into a mixing bowl.
  4. Mix the scooped potato flesh with butter, sour cream, cheese, chives, salt, and pepper until creamy.
  5. Refill the potato skins with the mixture and top with reserved cheese. Bake again at 350°F (175°C) for 15-20 minutes until heated through and golden brown.
  6. Serve warm, garnished with extra chives if desired.
