  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh corn kernels (or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin powder
  • 2 tsp chili powder
  • Juice of 1 lime

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté chopped onion for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  2. Season chicken breasts with salt and pepper, then add to the pot. Brown on both sides, about 6 minutes per side.
  3. Stir in diced tomatoes, black beans, corn, chicken broth, cumin powder, and chili powder. Mix well.
  4. Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes.
  5. Remove the chicken; shred it using two forks and return it to the pot.
