  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • For the Salted Caramel Drizzle:
  • 1/2 cup coconut cream
  • 1 cup brown sugar, packed
  • Pinch of sea salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in melted butter, granulated sugar, brown sugar, eggs, and vanilla until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add to banana mixture until just combined.
  5. Pour batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. For the caramel drizzle, combine coconut cream and brown sugar in a saucepan over medium heat; stir until thickened (about 5 minutes), then add sea salt.
  7. Allow bread to cool slightly before slicing and drizzling with salted caramel.
