  • 2 cups chopped zucchini
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by washing and chopping them into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté diced onion until translucent; add minced garlic until fragrant.
  3. Add chopped carrots, zucchini, and red bell pepper to the pot. Stir well and season with salt, pepper, and dried thyme.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to simmer for about 30 minutes until vegetables are tender.
  5. Optionally blend some of the soup for a creamy texture; serve warm garnished with fresh parsley if desired.
