Lavender lemon bars are a delightful dessert that perfectly balances tangy lemon and floral lavender flavors.   • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp dried culinary lavender (crushed)
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. For the crust, mix softened butter and sugar until fluffy. Gradually add flour, then press into the bottom of the baking dish. Bake for 15 minutes until golden.
  3. While cooling, whisk together eggs, sugar, lemon juice, lemon zest, crushed dried lavender, and baking powder until smooth.
  4. Pour the filling over the crust and bake for another 20-25 minutes until set but slightly jiggly in the center.
  5. Cool completely in the pan on a wire rack, then refrigerate for at least two hours before slicing into squares.
