  • 8 oz fusilli pasta
  • 2 cups baby spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 ripe avocado, diced
  • 4 green onions, sliced
  • Juice of 1 lemon
  • 1 cup Greek yogurt
  • 2 tbsp Dijon mustard
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the fusilli pasta in salted boiling water according to package instructions until al dente (about 8 minutes). Drain and let cool.
  2. While the pasta cooks, chop the spinach, cherry tomatoes, cucumber, avocado, and green onions into bite-sized pieces.
  3. In a mixing bowl, combine Greek yogurt, Dijon mustard, lemon juice, basil, and parsley. Whisk until smooth.
  4. Once cooled, combine pasta with chopped veggies in a large bowl. Pour the dressing over and toss well to coat.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving for optimal flavor.
