  • 1 cup crumbled feta cheese
  • 1 cup chickpea flour
  • 2 cloves garlic, minced
  • 2 tbsp olive oil (plus more for frying)
  • Juice of 1 lemon

  1. Wash and roughly chop the fresh spinach.

  4. Form small patties (about 2 inches in diameter) from the mixture.
  5. Heat olive oil in the same skillet over medium-high heat and fry the patties until golden brown (approximately 4-5 minutes per side).
  6. Transfer to paper towels to absorb excess oil and serve warm.
