  • 1 lb boneless, skinless chicken breasts (about 3-4)
  • 1 cup raw unsalted cashews
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 cup mixed bell peppers (red and green), sliced
  • 4 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp cornstarch
  • 2 tbsp honey or maple syrup
  • 2 tbsp vegetable oil

Instructions

  1. Chop the chicken into bite-sized pieces; slice the bell peppers and green onions.
  2. Marinate the chicken in a bowl with soy sauce, minced garlic, grated ginger, and honey or maple syrup for at least 20 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and sauté until golden brown (5-7 minutes).
  4. Add sliced bell peppers to the skillet; sauté for an additional 3-4 minutes until tender.
  5. Whisk cornstarch with chicken broth in a separate bowl; pour into the skillet while stirring continuously until thickened (about 2 minutes).
  6. Stir in cashews and green onions just before serving. Enjoy warm over rice or noodles.
