  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup ice water
  • 2 cups fresh blueberries (or thawed frozen)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. Prepare the Dough: In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Wrap in plastic wrap and chill for at least one hour.
  2. Make the Filling: Toss blueberries with lemon juice and cornstarch in a separate bowl.
  3. Roll Out the Dough: On a floured surface, roll out dough to about 1/8 inch thick; cut into 5-inch circles.
  4. Fill and Seal: Place filling in the center of each circle, fold over, and seal edges with a fork.
  5. Bake: Preheat oven to 375°F (190°C). Brush tops with melted butter and bake for about 25 minutes until golden brown.
  6. Cool and Serve: Let cool slightly before serving.
