  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 8 oz block feta cheese
  • 2 cups ripe cherry tomatoes
  • 3 tbsp olive oil (divided)
  • 12 oz penne pasta
  • 1/4 cup fresh basil, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season chicken breasts with salt, pepper, and garlic powder. Heat 1 tbsp olive oil in a skillet over medium-high heat, sear chicken for about 3-4 minutes on each side until golden brown.
  3. In the baking dish, arrange cherry tomatoes around the chicken and place feta in the center. Drizzle everything with remaining olive oil and season with salt and pepper.
  4. Bake for 20-25 minutes until tomatoes burst and feta softens.
  5. While baking, cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  6. Once out of the oven, mash feta and tomatoes together into a sauce. Toss in cooked pasta along with reserved water and fresh basil before serving.
