  • 1/2 cup full-fat coconut cream
  • 2 tbsp unsweetened cocoa powder (for coating)
  • 1/4 cup chopped almonds or hazelnuts
  • 1 tsp pure vanilla extract

Instructions

  1. Chop dark chocolate into small pieces and place in a heatproof bowl.
  2. Add coconut cream and melt over a double boiler until smooth.
  3. Remove from heat, stir in vanilla extract, and let cool for about 30 minutes.
  4. Refrigerate until firm, approximately 1 hour.
  5. Scoop portions using a melon baller and roll into balls.
  6. Coat each truffle in cocoa powder or chopped nuts.
