  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 1 cup fresh strawberries (pureed)
  • 1 tsp agar-agar powder
  • 1 cup whipped coconut cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan or line it with parchment paper.
  2. In a bowl, mix melted butter and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in flour and cocoa powder until just combined.
  3. Pour the brownie batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
  4. While cooling the brownies, blend fresh strawberries in a food processor. In a saucepan over medium heat, dissolve agar-agar in water, then mix into the strawberry puree.
  5. Whip chilled coconut cream until fluffy peaks form, then fold into the cooled strawberry mixture.
  6. Once brownies are completely cool, spread the mousse on top and refrigerate for at least two hours until set.
