  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 cup uncooked white rice (long grain or jasmine)
  • 2 1/4 cups chicken broth or water
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 1 1/2 cups frozen peas and carrots

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine ground meat, breadcrumbs, egg, minced garlic, soy sauce, salt, and pepper. Roll into 1-inch balls.
  3. Spread uncooked rice evenly in the baking dish; layer frozen vegetables on top. Pour in chicken broth.
  4. Place meatballs on top of the rice mixture; cover with foil and bake for 40–45 minutes until rice is tender.
  5. Meanwhile, prepare the sauce by simmering honey, soy sauce, ketchup, rice vinegar, and minced garlic in a saucepan. Thicken with cornstarch slurry.
  6. Remove foil from the baking dish; pour sauce over the meatballs and rice. Bake uncovered for an additional 5–10 minutes to set the glaze.
  7. Garnish with chopped green onions and sesame seeds before serving hot.
