  2. In another bowl, dissolve yeast in warm water with a tablespoon of honey; let sit until bubbly (5-10 minutes).
  3. Combine softened oats, melted butter, and remaining honey into the yeast mixture.
  4. Gradually add flour, cinnamon, and salt; stir until a shaggy dough forms.
  5. Knead on a floured surface for about 8-10 minutes until smooth.
  6. Place in an oiled bowl covered with a towel; allow to rise for 1-1.5 hours until doubled in size.
  7. Shape into a log and place in a greased loaf pan; let rise again for 30-40 minutes.
  8. Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown.
