Homemade Roasted Tomato Basil Soup is a delightful, flavor-packed dish that transforms fresh tomatoes and aromatic herbs into a comforting bowl of goodness. This easy-to-make soup features the natural sweetness of roasted tomatoes and garlic, balanced with the aromatic essence of basil.

  • 3 pounds roma or plum tomatoes
  • 8 cloves garlic
  • 3 tablespoons olive oil
  • 2 yellow onions
  • ½ cup fresh basil leaves
  • ½ teaspoon dried oregano
  • 12 cups water or vegetarian broth
  • Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Halve the tomatoes and place them along with garlic on the sheet. Drizzle with olive oil, season with salt and pepper, and roast for 40-45 minutes.
  2. In a large pot, heat olive oil over medium heat and add thinly sliced onions. Cook until caramelized, about 20 minutes.
  3. Allow roasted tomatoes and garlic to cool slightly before blending until smooth in a food processor or blender. Add basil and caramelized onions; blend until fully combined.
  4. Return the mixture to the pot over medium-low heat. Add oregano and water or broth according to desired thickness. Season as needed and simmer for about 10 minutes.
