  • 8 ounces baby bella mushrooms
  • 4 tablespoons unsalted butter
  • 1 cup vegetable oil (for frying shallots)
  • 1 ½ cups chicken broth
  • ½ cup heavy whipping cream
  • ½ cup grated Parmesan cheese (divided)
  • Creole seasoning or seasoned salt (to taste)
  • Fresh lemon juice
  • Garlic
  • Dijon mustard

Instructions

  1. Prepare fried shallots: Heat vegetable oil in a skillet over medium heat. Add sliced shallots seasoned with Creole seasoning and fry until golden brown (about 5-7 minutes). Drain on paper towels.
  2. Cook green beans: Boil trimmed green beans in water until tender-crisp (about 5 minutes). Drain and set aside.
  3. Make the creamy mushroom sauce: In the same skillet, melt unsalted butter, sauté mushrooms and garlic until tender. Stir in flour to form a roux; gradually add chicken broth, then stir in lemon juice, Dijon mustard, thyme, and half the Parmesan until thickened.
  4. Assemble casserole: Preheat oven to 350°F (175°C). Mix cooked green beans with mushroom sauce in a baking dish. Top with remaining Parmesan and fried shallots.
  5. Bake for about 25 minutes until bubbly and golden.
