  • 3 lb sweet potatoes, peeled and sliced thin
  • 1 1/2 cups heavy cream
  • 1/2 cup butter
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • 1 tsp cornstarch
  • Kosher salt and freshly cracked black pepper, to taste
  • 1/3 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a mixing bowl, whisk together heavy cream and cornstarch until smooth. In a saucepan over medium heat, melt the butter, add minced garlic, and sauté until fragrant. Stir in thyme, salt, pepper, and the cream mixture until slightly thickened.
  3. Layer half of the sweet potato slices in the baking dish, pour half of the garlic butter mixture over them, then repeat with remaining slices and mixture.
  4. Sprinkle grated parmesan on top, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
