  • 2/3 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon cold unsalted butter (cut into small cubes)
  • Homemade pie crust (makes 2 crusts)

Instructions

  1. Prepare your preferred pie crust recipe and chill.
  2. In a large bowl, combine blueberries, sugar, flour, cornstarch, cinnamon, lemon juice, and lemon zest. Mix gently until the blueberries are coated and set aside.
  3. Preheat oven to 425°F (218°C) and place a baking sheet on the lower rack.
  4. Roll out one disc of dough to fit your pie dish and fill it with the blueberry mixture. Dot with butter.
  5. Roll out the second disc of dough to create a lattice top over the filling and seal the edges.
  6. Brush with egg wash and sprinkle coarse sugar if desired.
  7. Bake for 25 minutes at 425°F, then reduce to 375°F (190°C) for an additional 40-50 minutes until bubbling.
  8. Cool for at least four hours before serving.
