  • 1 lb ground turkey sausage
  • 2 ribs celery, diced
  • 1 yellow onion, diced
  • 2 large carrots, diced
  • 5 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 Yukon gold potato, diced
  • 1 cup green beans, trimmed and diced
  • 2 cans (15 oz each) beans (red kidney and white navy), drained and rinsed
  • 28 oz can fire roasted diced tomatoes
  • 5 cups chicken broth
  • ½ cup uncooked ditalini pasta

Instructions

  1. In a large pot over medium heat, crumble and cook the ground turkey sausage until browned; set aside.
  2. In the same pot, sauté celery, onion, carrots, salt, pepper, and optional chili flakes for about 8-10 minutes until soft.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add cooked sausage back to the pot along with zucchini, potato, green beans, both types of beans, diced tomatoes, chicken broth, and bay leaves.
  5. Bring to a gentle boil then reduce heat to medium-low. Cover and simmer for 30-45 minutes until potatoes are tender.
  6. Stir in uncooked pasta and simmer for an additional 7-10 minutes until pasta is al dente.
  7. Remove bay leaves before serving hot.
