  • 1 cup green or brown lentils
  • 1 cup low-sodium vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed bell peppers, diced
  • 1 cup zucchini, diced
  • 1 cup shredded mozzarella cheese (or plant-based cheese)
  • 1/4 cup shredded cheddar cheese (or plant-based cheese)
  • 1 tablespoon agar-agar powder
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a medium saucepan, cook lentils in vegetable broth over medium heat until tender, about 20-25 minutes.
  3. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant. Add bell peppers and zucchini; cook until just tender.
  4. In a large bowl, combine cooked lentils with sautéed vegetables. Stir in agar-agar and half of the cheese. Season with salt and pepper.
  5. Layer half of the mixture in the prepared dish, then add remaining mixture and top with the rest of the cheese.
  6. Bake for 30-35 minutes until bubbly and golden brown. Serve hot.
