  • Broth or water to cover

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium heat. Sear beef cubes in batches until browned on all sides (8-10 minutes). Remove from the pot.
  2. In the same pot, sauté chopped onions until softened (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Return the beef to the pot along with any juices. Stir in carrots and parsnips.
  4. Add enough broth or water to cover ingredients by about an inch. Bring to a boil, then reduce heat and simmer covered for 1.5-2 hours until beef is tender.
